Also available in our gift shop are, New England gift baskets (filled with our maple products), Anita's unique photography, in digital prints, and handmade natural body products from Delights of the Earth produced by our daughter Jennifer,are also available in the farms gift shop.

Our StrawbaleCafe and Gift Shop is opened year round Wednesday through Sunday 8 am to 2 pm for breakfast and/or lunch. On Sunday's we offer only breakfast from 8 am to 2 pm. We are closed Monday & Tuesday.

 

 

Maple Syrup FAQS

Question:
How many gallons of sap is used to make a gallon of syrup?

Answer:
It normally takes 40 gallons of sap to make a gallon of syrup, but we have seen years where the sugar content has been so low in the sap, that it took 60 gallons of sap to make a gallon of syrup.

Question:
How many trees do you have set each year?

Answer:
It doesn't go on number of trees, but number of taps. You see, some trees get only one tap, while the big trees can get 4 or more taps. We try not to overtap our trees so that they are not unduly stressed during the season.

Question:
What is the best method for storing maple syrup that is currently opened and being used?

Answer:
Store maple syrup in the refrigerator, where it keeps nicely. If mold should develop, the syrup can be boiled and strained through cheesecloth, and it will be perfectly good. If it crystallizes it can be restored to a pourable consistency by setting the container in hot water until the crystals dissolve.

Grades of Maple Syrup and their uses

GRADE A SYRUP:

  • Fancy or Light Amber: This syrup is made in the earliest part of the season when temperatures are at their coolest. This early syrup is most often used in the making of candies and creams.
  • Medium Amber: Most popular choice for table use because of it sweet maple flavor.
  • Dark Amber: More pronounced maple taste, made at the end of season before buds begin to swell on trees, but is also widely enjoyed as a table syrup.

GRADE B (COOKING) SYRUP:
More pronounced maple taste, that is made at the end of the syrup season, so it takes on a slight carmel flavor and just a hint of bitterness. It is used on the table or in any recipe that calls for processed sugar. Some folks also enjoy this syrup as a table favorite because of the stronger maple flavor.
