Question:
How many gallons of sap is used to make a gallon of syrup?
Answer:
It normally takes 40 gallons of sap to make a gallon of syrup, but
we have seen years where the sugar content has been so low in the
sap, that it took 60 gallons of sap to make a gallon of syrup.
Question:
How many trees do you have set each year?
Answer:
It doesn't go on number of trees, but number of taps. You see, some
trees get only one tap, while the big trees can get 4 or more taps.
We try not to overtap our trees so that they are not unduly stressed
during the season.
Question:
What is the best method for storing maple syrup that is currently
opened and being used?
Answer:
Store maple syrup in the refrigerator, where it keeps nicely. If
mold should develop, the syrup can be boiled and strained through
cheesecloth, and it will be perfectly good. If it crystallizes it
can be restored to a pourable consistency by setting the container
in hot water until the crystals dissolve.
